• There were many reasons for the change of the site software, the biggest was security. The age of the old software also meant no server updates for certain programs. There are many benefits to the new software, one of the biggest is the mobile functionality. Ill fix up some stuff in the coming days, we'll also try to get some of the old addons back or the data imported back into the site like the garage. To create a thread or to reply with a post is basically the same as it was in the prior software. The default style of the site is light colored, but i temporarily added a darker colored style, to change you can find a link at the bottom of the site.

I just finished watching a great football game and then a darn good meal and thought I'd share one of them since it's winter :yes:.... I haven't made this since " Safe-cracker " and His bride were here this past year :clap:.... It's Shrimp Scampi ( the classic way - no cream ), I try to make it as Heart healthy as I can :roflblack: so it's only 1/2 butter and 1/2 olive oil + garlic ( lots ) + sautéed diced onion + parsley + 1/2 tsp. lemon/pepper + sea salt ...... on the side I like chilled Asparagus vinaigrette .... this I get at the " DOLLAR STORE " you may laugh but they sell the thinnest, tenderest asparagus I have ever found. A brand that's un-known " Pampas " 12 oz for $ 1.00 :yes:... To prepare, the night before I drain the can, then spread on paper towel and put in fridge un-covered over-nite, then put into a small size container and cover with Italian dressing ... 8 hrs + .....keep cold....... To make the Scampi, remove shells from as many shrimp as you need...... PUT shells in a pot and add as much water as needed to make the white or basmati rice you plan to eat with this serving, bring shells to a boil then put aside for 1/2 hr, this is your stock for the rice ( it makes a big difference in the flavors ) ....... I won't give you amounts because it varies depending on how many servings and what size they are - sorry ....... I heat water to make rice - putting in Sea salt, powered Garlic, and parsley .... add rice and cook it....... in a high sided sauce pan ( of appropriate size ) melt butter & olive oil, lemon pepper then saute diced onions slightly..... When rice is done , re-heat butter etc. adding garlic paste or fresh chopped then shrimp until pink 2-3 min per side depending on size ...... when shrimp is cooked remove to platter and then add rice to sauce-pan ( with the butter/oil ) taste it and add more powered garlic if needed. Serve with rolls / bread and the asparagus and a nice Moscato goes well ( balances the strong flavor of garlic and vinaigrette ) ....... Sounds great but a lengthly process...but as he said.."i will serve no wine before it's time" applies to good food as well.:2thumbs: Thanks for the receipe will fix it for my daughter next time she comes. She loves shrimp and I don't eat seafood in these parts....

I have had the privilege of being a guest of Mikes...oh my this man can gourmet cook...I encourage you to get on his 'vacancy" list, but bring clothes that have expansion roooooom. Dang he makes the best, starting with coffee!!! And Max and Kikki are pretty nice also..:thumbup::clap:
