It's an ingredient in Vietnamese Pho as well. Along with tendons.

It's been awhile since I've had it but I do like it and used to eat it whenever it was available. Not a big item in the south. I first enjoyed in in Okinawa on my way to Vietnam.I must admit I was probably pretty drunk the first time. Good stuff though.

Do you grill, boil, broil, bake, smoke or eat raw? Do you use bbq sauce or mustard?

Did not like snails. Oysters Raw or fried are good, clams are good raw but steamed & eaten with butter delicious but prefer them fried. Calamari is delicious if prepared right. Never eaten lobster. Allergic to it.

They’re best when they have a little gritty sand in them.
