Here in the North, it becomes more difficult to ride as the weather cools, and becomes impossible in the snow, ice, and salt. A person has to have something else to occupy himself/herself for part of the year. I have ridden during every month, but to spend half an hour putting on longjohns and winter gear, just to ride ten minutes to the store on an errand, isn't going to happen. In addition, because drivers don't expect to see motorcycles this time of year, riding is more dangerous.
Probably the thing I do most to occupy my time is work out. Although I exercise in the summer, too, I am less likely to be diverted from my workouts in the winter, and I need the exercise more. Home improvement projects are another year-round thing that get more attention during the winter...at least the smaller and indoors projects. I like working with my hands. The garage is unheated, so the cars and motorcycles are worked on only in the warmer months.
I restored a motorcycle in the basement a few years ago, but it was too hard to get it out when it was finished, so that seldom happens now. I enjoy model railroading, woodworking, and I do some occasional wood carving. I used to read a lot, but after the motorcycle accident several years back scrambled my brains, I have trouble concentrating for long. That has also cut back on the geneaology work.
So, that is what keeps me going. What hobbies and interests occupy your time when you can't ride?
