I have a 4 piece back packer trout rod, comes with a cloth tool wrap type thingi that slides into a screw top tube.
I guess you could secure the tube to the passenger hand grips or similar.
I have a collapsing telescoping rod that has 5 or six sections. (haven't used it in a while). It shrinks down to about 14'' & will easily fit in the frunk or trunk. To keep things simple, I put a Zebco 33 reel on it.
A 3 or 4” dia PVC tube with end caps mounted to the trunk rack or passenger floorboard or strapped to the passenger seat might work.

Don't know what kind of fish your after but if it's trout or panfish look into Tenkara fishing. I started doing it a couple years back and has been a blast! I got mine from Dragontail.
Do you have a hitch? Could you simply take some 2 inch PVC, heat up and make oval shape. Then take saber saw and cut out a notch on one side. Mount 3 or 4 to a piece of wood and mount to hitch. Place poles on tubes and Velcro. They work on boats, fronts of trucks and rear of trucks for beach fishing. You could also take a piece of 1x12, make a triangle wedge and a 2x12 as a base making a L bracket and mount the L to the hitch. Then use pipe clamp to attach pvc to the 1x12. I’d ratchet strap the bases to the hitch. They would look like huge antennas in the back. You can buy professional hitch pole holders that slide into 1-1/4 and 2 inch receivers too. They are not that much - Hitch mounts for $59.

I carry a 7’ two piece fishing rod. Break it down and put piece of swim noodle around where the trunk lid hits where the rod sticks out from the trunk. Then use elastic to hold the trunk shut.
I used to fish quite a bit with a Daiwa travel pak outfit. It comes in a small case with room for a spinning reel and some tackle. It was an ultralight outfit and I would run 4-6lb line. I used it for fishing ponds and forest preserve lakes for large mouth bass, bluegills and an occasional catfish. Fishing with an ultralight outfit is a really fun challenge and some of my best memories were while fishing with it. With a little sense to what you’re doing you can land some really big fish.
