Yes, that will happen. The Bikes, Cars, and Coffee event was probably why you encountered the police. They knew they would find some ticketbait.
Here, in AR, USA, 5 over the posted limit will get their attention, but 10 or more is usually where tickets are issued at the discretion of the officer.

In the back of my head I knew they probably was out somewhere looking for targets going to the event.
In todays paper I read that 48 people got pulled over and fined in traffic control yesterday, so I was not alone. Next event I will pay more attention to the speed for sure.

Maybe a radar detector would benefit you. A while back I thought about one. Are they legal in Norway?

Many of the higher end radar detectors are very good at front and rear or even to the side radar signal detection. Not so good at laser. At best you would hope to detect laser beam scatter off a vehicle in front of you giving you time to slow down. The problem with laser is the reading at the gun is done very quickly, less than a second, leaving no reaction time if it was aimed at you. There are some expensive countermeasures you can run but I think they are strictly illegal in most of Europe.

I've always heard that for laser, by the time the detector detects it, you've been detected. Same for your eyes and radar, if you see them, they've probably already clocked you. I find it best to just watch the brake lights in front of me... a group of cars all braking should always cause you to slow down, even if it doesn't end up being police. Not that I ever speed, of course.
