Just installed the Show Chrome hitch and made my own mud flap.
Nice job! Info on the set screws on the underside of your hitch. One of mine ran away! I replaced it with a hex bolt, tighted them then painted one flat with white marking paint, so as to keep an eye on them. Ride on.

Based on what I see in your pic, and on my experience, I would recommend you cut at least 1", and maybe 2", off the bottom of the flap. Why? If you back over a typical gutter curve that is often used in residential areas you'll catch the flap between the pavement and tire and rip if right off. I did it twice, once on my 2013 RT, and once on my 2014 RTS. Both times the flap was made from rubber cushion mat from a local farm and garden store so it just tore apart and didn't hurt the fender. Your flap looks like it may be stout enough that if it gets caught it might rip the bolts right out of your fender. My current mud flap is 5" above the floor. The ones that got caught and torn off were about 3" above the floor.
