I met this guy in Daytona and he took the stock throttle cable and made a foot throttle.

I met a Spyder rider who was riding a SE5 with only a left arm. It seemed to work out o.k., but I don't know about the throttle.

Maybe something like a thumb throttle from a fourwheeler mounted on the left.

This could be about the only option but, (you know I have to throw in a but) could get very tied-some during a long distance ride.. Is there a reason why you couldn't hook up a regular TWISTER type throttle on the left instead of the right? If he plans on a SE this should work, I'm thinking off the top of my head you may have to relocate the paddle shifter.. Interesting to see what you come up with on this one if he decides to go forward with the deal.. Interesting for sure..

You might check out throttlesense or somebody that makes left hand throttles for snowmobiles. They are made for riding mountains so you can hang off the side like this.
    <object width="480" height="385"><param name="movie" value="http://www.youtube.com/v/MKn9kOtVgEg...</param><param name="allowFullScreen" value="true"></param><param name="allowscriptaccess" value="always"></param><embed src="http://www.youtube.com/v/MKn9kOtVgEg?fs=1&amp;hl=en_US" type="application/x-shockwave-flash" allowscriptaccess="always" allowfullscreen="true" width="480" height="385"></embed></object>
    Longlegs rides again.
