    Default What 's for Dinner?

    It's two weeks till Christmas. Just wondering what you will have for Dinner? Duck? Beef? Turkey? Ham? or something else. We will be enjoying a Turkey. Seasons Greetings to All.

    We have 10 for Christmas dinner. Start with a traditional New Orleans style seafood salad (lump crab, crab claws, boiled shrimp on mixed field greens) then a main course of king crab legs, and I have not yet decided on dessert though I am leaning toward a lemon chiffon cheesecake.

    Beef rib roast (prime rib). Aged, seasoned, smoked, and roasted to a perfect med-rare. Merry Christmas!

    The Missus is still working on this question...
    It'll just be the two of us this year, so I'm hoping for something simple.

    but then I do all the cooking so will have to see what comes to mind.... May go Irish with the cornbeef, cabbage and potatoes...

    We are having Christmas early(Dec 23) so the kids can come down. If they all make it we'll have about about 27. Probably do a Ham maybe Brazil Nut stuffing and a Smoked Turkey.

    We decided to pull a switch for Thanksgiving. We had ham and all the trimmings.

    For Christmas, we are going to do turkey and all the trimmings. Going to have a total of four at the dinner for sure.

    Currently Owned: 2019 F3 Limited, 2020 F3 Limited: SOLD BOTH LIMITEDS in October of 2023.

    Previously : 2008 GS-SM5 (silver), 2009 RS-SE5 (red), 2010 RT-S Premier Editon #474 (black) 2011 RT A&C SE5 (magnesium) 2014 RTS-SE6 (yellow)

    MY FINAL TALLY: 7 Spyders, 15 years, 205,500 miles

    Great minds think alike. I've got a 16# whole prime rib. Low and slow on the smoker till around 125*. Then sear under the brolier for about 5-7 min.

    Not sure what other goodies I'll stick on the pit.

    Normally we do a standing rib roast with smashed taters, Yorkshire pudding, and a token vegetable, because, you know, eat healthy...

    However, we're traveling *on* Christmas Day so will instead be doing a beef tenderloin with some more prefab sides.

    Of course we will start with … ESCARGOT'…. and then to the Turkey , I bought a Breast instead of a Whole turkey because it will be a small group …………. For those who might be doing similar … I have now done Five turkey's using the method's of the Food Channels - Alton Brown …… Juciest turkey ever …….. He brine's it in a simple solution for 18-24 hrs. , He starts the turkey at 500 F for the first half hour, then 350 F …..until its' done …..watch His video's on -line ……...Mike

    Thanksgiving turkey - Organic, free range (not only veggie fed), fresh (never frozen). Brine in salt and sugar for 48hrs. Gently lift the skin from the breast, around to the thighs. Lay thick cut, fatty smokehouse bacon under the skin, over the entire breast. Stuff and roast at 325* until done.
