Seattle? Best bet is to get away from Seattle traffic! ;)
Some options:
Go east to see Snoqualmie Falls - a nice ride out in the country highways.
Take the Washington State Ferry system and island hop. Get onto the Bainbridge Is Ferry from downtown and explore Bainbridge Is, then island hop to surrounding islands.
Farther away: Deception Pass, Mt Baker and Olympic National Park - all long rides or overnighters.
Yes, get away from Seattle. Here's some ideas.
South Side:
Mt Rainer
St. Helens
Snoqualimie/Falls City/Carnation valley
West side
Bainbridge or Kingston Ferry to towards hwy 101 south towards Oly/Tacoma loop
Olympic pen hwy 101 towards Neah bay
North
Mountain Loop: Hwy 20 up to Lake Diablo and down looping with hwy 530
Mt Baker
Hwy 9 towards Canada North of Arlington (traffic is nuts south of that)
Chukanut drive (south of Bellingham)
Marine drive (north of Everett) towards La Conner
Whidbey island ferry through deception pass

Stay away from the Olympia to Everett corridor (I-5 & 405) as much as possible. Great rides are Mulkiteo Ferry to Whidbey Isl. to Deception Pass to Mount Vernon and south towards Seattle on 9. Take the Anacortes ferry to Friday Harbor and explore San Juan Island. Don't miss Roche Harbor, American Camp and English Camp. From Monroe go E on 2 over Stevens Pass to Leavenworth (lunch) Then to 97 and Blewett Pass to I-90 and back to Seattle. All 3 options are very doable in one day. Enjoy
