Pulled pork .... From a pressure cooker
I've posted about using a pressure cooker for cooking chicken in 10 min. :clap: .... Today it's all about Pulled Pork (in an hour) :yes: :yes: :yes: .... Pulled Pork the usual way takes 6+ hours in an oven etc. .... I got a recipe on how to do it in a pressure cooker and it came out FANTASTIC .... Depending on how large the P.C. is (mine is Four qts. = 3 1/2 lb pork butt MAX) .... I did a dry rub, then added some garlic into slits in the butt..... I wanted gravy, so used a large stainless fry pan to brown the butt, added a bit of red wine to de-glaze, simmered some chopped onions, made a slurry with 1 1/2 tbl corn starch, added 2 cups water & some thyme & sage etc. & one packet of powdered gravy mix ...... put Butt into P.C. on a raised disk, poured the gravy mix over it, and closed the Lid .... Brought it up to temp and lowered the heat to the point where the Pot 's temp regulator is just "giggling" slightly ..... cooked for an Hour - re-leased the steam. I broke off large junks of meat into a serving bowl, then poured off the gravy. ..... the pork was about as tender (& juicy!) as any pulled pork I have ever eaten. :thumbup: :thumbup: :thumbup: ..... if you just want Pulled Pork, do the rub and only add one cup of water .....
