How about meeting at the Circle K FL-25 S/US-27 S
which is intersection of 70 and 27. at 11:00 ??????? for central Fl Ryders

Thaw frozen boar meat slowly for a day or two. Never defrost wild boar in the microwave; the result is tough, stringy meat.

Marinate the meat overnight. Pineapple juice or wine are both excellent choices because each contains an enzyme that tenderizes meat.
Trim the fat if you like. A wild boar has a very light fat layer. Some cooks like to leave it intact to retain the succulence of the meat by allowing it to "self-baste."
Gather spices, seasonings, lemons, onions, potatoes, carrots, pepper and garlic. Wrap the meat, vegetables and seasonings tightly to lock in all the steam and flawors.
Smoke or bake the meat at 275-300 degrees F. Turn or rotate to cook evenly. Cook whole hogs overnight or all day. A quarter hog cooks in about five or six hours.

You guys need to come up to Tennessee and shoot some big hogs... those FL hogs look kinda small & I dont see any tusks, but they are probably a lot better eating.

It was a great time... Louis was letting the dogs do the dirty work...lmao:joke:

We woke up Forest in time to shoot his hog... But he has eye boogers still settled in, so he had a hard time seeing the hog...:yikes::shemademe_smilie:

It was a hot afternoon... so a bit of sweat may of appeared...:roflblack:

no sleep for me... I bounced around in the swamp buggie like a loose basketball on Ice.

Also I was trying to load my Rifle after Louis emptied the rifle.

My turn was last and I got the biggest hog.

Arkansas Razor Backs are mean for shooting but more than 1 year old, tougher than a boot and hardly any flavor.

The pic was taken at my cabin located on a US Forest Service road between Murphy NC and Tellico Plains TN, very close to the TN/NC state line. I have seen some huge hogs taken out of there and you are right, those are'nt much good for dinner!
Any time you want to spend some time up there just let me know...

this morning packaged them with marinade for freezer... I did keep one rack out and put it in carribian jerk marinade...

This afternoon placed on nu-wave oven for a slow cook... :yes:

OMG... it was awsome.... :2thumbs:
