I'm going to unhook the stock fuel and temp gauges and install a clock and a oil pressure or oil temp gauge but I'm wondering where to put the new sensor for new gauge. Which would be more useful and which would be more difficult to install? Electric or hard tube? thanks

I have installed a voltmeter in one, it is more important to be aware of voltage, You already have a digital temp gauge that is acurate.

I believe there was a discussion here sometime in the past few years about connecting an oil pressure gauge. A Google search may find it better than the forum search. Put your search terms in the box followed by site:spyderlovers.com. Not sure what real value oil temp would be. It's probably not much different than coolant temp.

The auto parts places have a coolant temp gauge with a sensor that just goes into the coolant hose between the water jacket and the radiator. You cut the hose and the sensor part has hose barbs on both sides.
