Not quite the same as a wine cellar, but we have friends who restored an old farmhouse outside of Philadelphia. When they pulled out the back porch floor they found a hand-dug and brick lined well, they estimated to be 60 feet deep.
When they rebuilt the porch as a sunroom, he put a thick piece of acrylic over the top of the well and added a light shining down. The first time we went over he had the lights turned down on the porch, and told me to stand in one spot to look at a picture, which placed me on the acrylic sheet. He walked over and turned on the well light. I went straight up in the air, because the sensation was being suspended over the empty well.
He used a geothermal heating system, and dumped the water back into the well. In the dead of winter the water level would come within a few feet of the floor. An amazing house and restoration.
