    Default New - Pressure cooker meal

    So I wanted to try a CHUCK roast in my pressure cooker .... only none on sale, but they did have a BOTTOM ROAST, so I bought that ... 5 lbs. ... It was waaaaay better than I expected .... made a slurry of 2 tbls. of Corn Starch using COLD red wine ... (or water) .... made TWO pkgs of dry brown gravy mix with THREE (not TWO) cups water heated in a very heavy fry pan and seared all sides of the roast .... de-glazed pan with some red wine. Poured that into Fry pan and heated to BOILING .... stirred in Corn Starch to thicken ..... put ROAST into Pot, then poured gravy over Roast ... I like carrots so added a 15oz. of Drained carrots to gravy and some onion slices .... Brought pot up to Temp then lowered heat to minimum setting on stove and cooked for 1 1/2 hours. ..... Let stand for 15 min. to release All THE PRESSURE .... THEN OPENED pot, took out roast put into a bowl .... I have an EMERSION BLENDER and used that in the gravy.... I Loooooove Potatoes so I peeled SIX - cut them in half and put those into the gravy mix.... re-covered the Pressure cooker and brought back to Temp. ... again lowered gas and cooked them for SIX minutes .... let sit to remove the PRESSURE ..... since I wanted to slice the Roast, I had to let it cool .... otherwise it would have fallen apart. ... You can season to taste with what you like before cooking. .... Then it's simply heat and eat ..... Enjoy ....Mike

    PS: If you want the GRAVY thicker, I have used "Instant Mashed Potatoes" with great success, just add a little at a time to gravy while stirring vigorously ...
    PPS: Walmart sells a LOW SODIUM version of the "Dry Gravy mix" for only $0.48 per package

    ...Hey BLUEKNIGHT911 what are your thoughts on Thanksgiving Dinner.
    Also how are you planning on cooking the food?

    Just checking and always still interested in your cooking class. ....

    Hey Mike, I need to know how many people you were feeding with this roast?? And how much in the way of those gravy-soaked vegies did each person get??

    Sounds like a great feed!

    I do what Alton Brown of the food network recommends .... The method is available over the net - look at Food Network .... I have used His method for over Ten Years and I've had ten years of Perfectly cooked Turkey's .... Briefly - Start with an un-covered Turkey in a 500 * oven for the time in His video, ....then He covers the BREAST with alumin. foil for most of the time left ..... good luck .....Mike

    Well, I could have fed 10 folks one generous portion meal .... I have a lot of left-overs and a lot of gravy .... I only cooked 5 potatoes because they really freeze well even if they are cooked..... The beef and the gravy Freeze well too...... I didn't make veggies to eat except for the Potatoes which I put in the P.C. after I cooked the BEEF .... The 15oz. can of sliced carrots were blended into the gravy .... The potatoes were of good size (whites) and I cut them in half. The beef was out of the pot resting when I put the potatoes in the gravy - resealed the P.C. heated it back to steam Temp. and cooked them for 6 min. Then let it rest until the pressure was gone. ..... I could have put some large carrots in with the Potatoes, but I didn't have any. By cooking the Potatoes in this manner - they get infused with the gravy and are fantastic ..... good luck .... Mike
