This is interesting. Are the parts listed above all the parts needed to switch everything? I am not understanding how the lids and such for the saddle bags would be changed, or atleast I do not see those parts listed. Can you clarify?

Yes this all the parts required,
mirror covers simply snap on/off
nise fairing has 1 bolt and rest snaps off
tank cover and console wings has 4 bolts and some push clips
Rear storage box cover is held on with 2 bolts and nuts
the saddle bags are not listed and not included
